Aji Sauce
- 3 ripe avocados, peeled, stone removed and mashed
- 1/3 cup coarsely chopped cilantro leaves
- 1 large tomato, finely diced
- 3 hard boiled eggs, grated
- 1 teaspoon Tabasco sauce or to taste
- ½ lemon, juiced
- Salt and freshly ground black pepper to taste
Mix ingredients in a medium sized bowl.
